I think that in the us, beef is subsidized enough that it's not too much of a big deal to not cut the patties if there were incentive, but the flavor of a hamburger lies pretty much solely in the sauce. The meat itself only provides texture.
I get that there's this antipathy towards soy and disingenuous products or whatever, but fast food is still just fast food.
