The leaves of most plants have life spans independent from the life span of the plant itself.

Leaves that are old are eaten by the plant, the plant sucks the nutrients back out of them as they die and they change colors.

No matter how well fed the plant is, its older leaves die and show symptoms of nutrient deficiency.

Plants can naturally tell that some leaves aren't getting much light, it will pick those leaves to self-cannibalize to feed itself, while leaving the good leaves getting lots of light.

In the case of trees, I guess it's just how they were designed. Why would they kill off all leaves, leaving no method of photosynthesis, for the entire winter? There is still some sunlight in the winter, but perhaps eating all their leaves and going into a dormant hibernation is better. It's a mystery that they stay alive.
