I don't know for sure but I think it has something to do with equality and respect, if everybody is sitting they are all equal. Japanese tea houses used to have short doors that one would have to crouch to get through, so even a Daimyo would be forced to be on an equal level to who ever else was inside from the beginning. When the Emperor passed a street nobody was allowed to view him from the second floor, they would be above him that way, if an important person was passing peasants had to prostrate themselves. If you were standing and everybody was sitting it would be like you think you are above them. There was an out roar caused when MacArthur forced the Japanese to print a picture of him standing along side the Emperor as he was much taller.
